The supervisor shall be directly responsible for overall planning, implementing, directing and controlling the activities of the Food Service Department.
• Directs Food Service staff in preparing, cooking and distribution food in accordance with approved
menus to include menu review, meal plans, portion control.
• Prepares daily and monthly inventory on meat cooler and freezer items.
• Prepares schedules of dietary positions, ensuring adequate coverage with minimum/no overtime.
• Plans and supervises meal preparation for special functions.
• Works with cooks and dietary assistants in preparation of meats, vegetables, sauces and
preparation of special diet foods.
• Completes all daily reports as required. Ensures compliance to all regulatory standards.
• Ensures compliance to daily/weekly/monthly cleaning schedules as established.
• Ensures time & temperature sheets and proper portion utensils are utilized.
• Responsible for the use of cafeteria & kitchen equipment.
• Prepares patient diet cards for diet changes during tray assembly.
• Maintains harmony in the department and with co-workers by exhibiting a positive attitude, a spirit
of teamwork and cooperation and concern for guest relations with patients, customers, visitors
and employees.
Education Required: High School Diploma and/or graduate of a technical school specializing in institutional food preparation required. Experience in a healthcare institution may be substituted for graduation from a technical school.
Experience: One to two years training with supervisory experience on this job or closely related.
